Sous Chef: Everyone helped!
Recipe: Pizza on the Grill
Pizza Dough:
1 T. yeast
1 1/4 c. warm water
2 T. sugar
2 T. oil
1/2 T. salt
3-4 cups flour
Dissolve the yeast and sugar in the warm water in a mixer (like Kitchen Aid) with kneading attachment. Let stand 5 mintues or until bubbly. Add oil, salt and 3 cups of flour. Continue adding last cup of flour until dough is slightly sticky. Knead until smooth and elastic. Divide dough into 6 even parts and shape into balls. Let dough rest covered with a cloth for about 30 minutes. Roll each ball into desired pizza crust thickness, and place on a surface (I used cookie sheets to easy transport to the grill) that has been sprinkled with Corn Meal to prevent dough from sticking to surface. Add desired pizza toppings.
Set grill to Medium-Low heat and gently slide pizzas onto the grill, close lid and cook until done. The original idea said to slightly cook the pizza dough first, then add the toppings and return the pizza to the grill....we didn't do that, and they turned out great. With the temperature so low everthing baked just fine and the bottom side didn't get too dark :)
