We are back and grateful we had a wonderful time on our vacation, but also excited to be home enjoying this holiday season! :)
Brian and I are going to a Christmas Party tonight, and we were asked to bring an appetizer to share with the group. I made a Cheese Ball that I think is delicious! I was orginally given this recipe by a good friend who is an amazing cook...thanks Tammy :)
Sous Chef: Brian
Recipe: Holiday Cheese Ball (by Tammy Mortensen)
Note: This recipe could easily be cut in half!
48 oz. cream cheese, softened (I buy the big loaf at Costco)
1 cup butter, softened
4 T. chives, diced
2 T. green onion, diced
2 T. celery, finely diced
4 T. red Pimentos, diced
1/2 t. garlic powder
1/8 t. lemon juice
1 cup cheddar cheese, shredded and layer evenly on a pie or dinner plate.
Mix all ingredients together, except the shredded cheddar cheese. (Note: I use my clean hands, but you could use a mixer.)
Step ONE: Put 1/4 amount of the cheese mixture onto 2 layers of plastic wrap, which has been layer in an "X" formation. Gather sides of plastic and twist at top to form a ball.
Step TWO: Remove plastic (I keep the cheesy plastic wrap and re-use it for the other cheese balls) and roll cheese ball around on the shredded cheese to adhere an even layer.
Step THREE: Re-wrap the cheese ball in clean plastic wrap and place in refrigerator until ready to serve.
