Whip it up Wednesdays

Dinner was so easy tonight! It could have been more time consuming, but I took a lot of short-cuts today :)

1. Used a crock pot to cook the chicken.

2. Made instant potatoes instead of peeling, cutting, boiling and mashing potatoes like we normally do (we used a new brand of instant potatoes that we hadn't tried before, that we purchased at Costco).

3. We served canned corn instead of the fresh, delicious corn that is in season right now and really cheap (should have stopped at the produce stand today...however, I was going for quick and easy, and canned is so much quicker!)

Recipe: Crock-pot BBQ Chicken

2 chicken breasts
1/2 - 3/4 cup favorite BBQ Sauce
1/4 water
mashed potatoes (could use a baked potato or hamburger bun instead)
cheese

Mix BBQ sauce with water in crock pot; add chicken and place on HIGH heat until cooked through (about 1 1/2 - 2 hours). Shred chicken with fork and place on LOW heat for another hour, so the sauce and chicken have time to heat through and simmer together.

Serve chicken mixture over mashed potatoes and garnish with cheese. Just missing a green salad on the plate and maybe a little green onion on top of the chicken!
