This is a recipe that I've created...nothing fancy or special, but I think they are good!
Recipe: Enchiladas
1 – 10 count package tortillas
1 pound ground beef, browned
1 pkg taco seasoning mix
1 – 2 cups cooked rice
1 can refried beans, whichever flavor you like
1 can enchilada sauce or you can make your own
2 cups cheddar cheese, divided
Preheat oven to 350. Brown ground beef. Add taco seasoning and cook according to package directions. Add refried beans to beef and stir; set aside. Pour enchilada sauce into large bowl or pan. Assembling directions for each enchilada: Dip tortilla into enchilada sauce and place in baking dish. Layer: even amounts of beef/bean mixture, rice and cheese into each tortilla. Roll in the pan and continue until all tortillas are rolled. Pour remaining enchilada sauce over tortillas and sprinkle remaining cheese on top. Bake for 20 – 25 minutes or until cheese is bubbly. Really good with sour cream and guacamole, and perhaps salsa for more of a kick! :)
