Recipe: Egg Salad Sandwiches
6 hard-cooked eggs, peeled and chopped
1/2 cup mayonnaise
1/8 - 1/4 cup relish (or chopped pickle)...I think I added too much relish because the final product was a bit runny, although it didn't taste like too much pickle...it still tasted really good, just texture was a bit off.
a few dashes of dried red pepper flakes
salt and black pepper to taste
NOTE: I normally will add a couple tablespoons each of celery and red bell pepper, but since my groceries are low in quantity and I didn't plan ahead, we made it simple. Also, some people like to add mustard, but I'm not a big fan of the stuff, so I usually don't add it to anything ;)
Combine all ingredients, mixing well and refrigerate until ready to serve. Spread on the bread of your choice and serve with sliced tomatoes and lettuce.
LIGHT: I made a small batch just for me that was a lighter version: 2 eggs, 1 T light mayo, 2 T relish and seasonings as listed above.
Recipe: Simple Fruit Salad
Fruit of your choice, chopped (we used grapes, strawberries, pineapple & oranges)
Yogurt (we used 6 oz. Light Strawberry)
Mix and serve. We've made all sorts of fruit salads, but this one is quick and easy to whip up!

I haven't made Egg Salad Sandwiches in a long time, and the family was very excited and only said positive comments.
The Fruit Salad was a hit too, and when they all found out I used light yogurt, they were surprised.
