In the most recent Kraft Food & Family magazine there was a recipe for "The Best Meatballs", that sounded very good :) Tonight was our ward's monthly potluck, so I decided to test out the recipe (quite daring for a potluck night, since we hadn't tried it first!) They turned out very good :)

Recipe: "The Best Meatballs" (Kraft's claim!...but have to pretty much agree)
2 lb. ground beef
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1-1/4 cups water
2 eggs
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken

HEAT oven to 400ºF.
LINE 2 (15x10x1-inch) pans with foil; spray with cooking spray. Mix ingredients until blended; shape into 32 (1-1/2-inch) balls, using 1/4 cup for each. (I used 1/8 cup, to make the portions smaller)
PLACE 16 meatballs in each prepared pan. Bake 16 to 18 min. or until done (160ºF).
COMBINE half the meatballs with Tomato-Basil Cream Sauce. Cool remaining meatballs; freeze for later use (unless you are feeding lots, then serve them all!)
Recipe: Tomato-Basil Cream Sauce (by Kraft)
Mix 1 jar (14 oz.) spaghetti sauce, 2 oz. cubed Cream Cheese and 2 T. chopped fresh basil in large skillet; cook on medium-low heat 3 min. or until heated through, stirring occasionally. Add hot meatballs; stir evenly to coat.
Critiques ~
The whole family was disappointed that they had to wait until the potluck, so I let them each sneak a couple for their after school snack! I of course had to have someone try them before I brought an untested recipe to potluck night!! The children all loved them :)
