Friday Favorites (yes, this is a couple days late!)

This weekend has been full of fun, family and food! A great combination in my book :) My little brother, David, was married to his sweetheart, Angie, and we had a lot of fun celebrating. On Friday, my family hosted the Rehearsal Dinner in their home, and each of us brought a delicious part of the menu. My mother requested that I bring Chile Cheese Canapes, which is a delicious recipe from my friend, Amye :) I wish I would have taken a picture of the entire food spread because it all looked (and tasted) wonderful! Here is a cute picture of the newlyweds...

Recipe: Chile Cheese Canapes (by Amye Kay)

½ cup mayonnaise
½ cup butter, softened
¼ cup cream cheese, softened (this is something I added, that isn't in the original recipe)
1 can diced chilies, drained
8 oz. Monterrey jack cheese, grated
2-4 garlic cloves, crushed
¼ tsp white or black pepper (I usually add both)
1 baguette bread, sliced (normally, I use the par-bake baguettes at the grocery store, but this time I used the baked baguettes, and asked a member of the bakery staff to cut the baguettes for me, which saved TONS of time!!)

Preheat oven to 400. Combine all ingredients and spread about 1-2 tablespoons mixture onto each baguette slice. Arrange on baking sheet. Bake until cheese melts and edges of bread are light brown. (When I use the par-baked baguettes cooking time takes a bit longer.)

Critiques: They went fast, and seemed to be enjoyed by all! :)
