Sweet Sundays

Sous Chef: Megan (she was very excited that she got to help on a Sunday because usually that is Brian's day)

Recipe: APPLE CAKE (recipe from mom)

4 cups apple, thinly sliced or shredded
2 eggs
1/2 cup applesauce (may substitute 1/2 cup oil)
1 1/2 cup sugar
2 tsp vanilla
2 1/2 cup whole wheat flour (I use 1/2 wheat & 1/2 white flour)
1 tsp salt
2 tsp baking soda
2 tsp cinnamon
6 oz chocolate chips or other optional ingredients (nuts or coconut)

Preheat oven to 350. Beat eggs. Add applesauce (may substitute ½ cup oil), sugar, vanilla & sliced or grated apples. Stir in soda, salt, flour (may use white flour) & cinnamon. Add chocolate chips, nuts, coconut or other optional ingredients. Pour into greased & floured 9x13 inch pan. Bake until cake pulls away from sides of pan; about 30-40 minutes. Top with powdered sugar when cool.
