Thirsty Thursdays

I'm finally posting on a Thursday! I have been meaning to create this drink for the last couple weeks, but it seems to be busy nights for us lately. An old family friend of mine, Jeff Rushton, visited my blog and graciously sent me some samples of POM Wonderful Pomegranate Juice to try and use in future recipes! I hadn't tried it before, so I was excited, and I'm now a fan! :) I think it would be wonderful in sauces and marinades for chicken, turkey and pork. However, tonight we created a POM Blue Smoothie, which is a recipe found on the POM website.

Recipe: POM Blue Smoothie (by POM Wonderful)

POM Wonderful Pomegranate Juice in the blender...showcasing it's rich color...
2 oz. freshly squeezed pomegranate juice or POM Wonderful 100% Pomegranate Juice
6 oz. fat-free blueberry yogurt, frozen (we just used plain frozen yogurt)
1 cup fresh blueberries (ours were frozen)
1 cup non-fat milk
Handful of crushed ice (since the blueberries were frozen, we didn't add ice)

Blend all ingredients together until desired consistency. (NOTE: We felt the pomegranate flavor was overpowered by the blueberries, so we added half the milk it called for and an extra couple ounces of POM juice.)

Looks yummy. We are so into the smoothie drinks right now. I was having a hard time getting fruit into our diets and we have been doing this since August on a regular basis. Will have to get my hands on this POM stuff from Mr. Rushton, since I know him personally! :)
