Tasty Tuesdays

Tonight was another church potluck night; however, we did not go because our dish was not ready on time, so instead we enjoyed our Meatball Sub Casserole as a family at home :)

Recipe: Meatball Sub Casserole (given to me by my dear friend Michelle...thanks!)

Meatballs:
1/3 cup chopped onions
1/4 cup breadcrumbs
3 tablespoons Parmesan cheese, grated
1 lb ground beef

Form into balls and Bake at 400 for 20 minutes. Faster Option: use your favorite fully cooked, frozen (de-thawed) meatballs instead. (We chose the faster option tonight :)

1 loaf Italian bread, 1-inch cubes
1(8ounce) package cream cheese, softened
1/2 cup mayonnaise (no substitutes)
1/2 cup cottage cheese (this is my addition, which thins out the cheese mixture to make it more spreadable and gives it a more cheesy flavor too)
1 t. mixed Italian seasonings
salt & pepper, to taste
1 cup shredded mozzarella cheese, divided
1 quart spaghetti sauce (or 28 oz can)
1 cup water
2 garlic gloves, minced

Meanwhile, arrange cubed bread in 9x13 pan. Mix together, cream cheese, mayonnaise and seasonings. Spread mixture onto bread pieces. Sprinkle ½ cup of the mozzarella cheese on top. Combine sauce, water and garlic; add prepared meatballs and gently mix; pour this over the cheese layer. Sprinkle remaining mozzarella cheese. Bake uncovered at 350 for 30 minutes.

Critiques:
I really didn't hear great praise tonight or great anguish, so I guess it was good all around :)
