Whip it up Wednesdays

This recipe is one I found a few years ago, and each Fall the children and I look forward to making and eating this delicious Pumpkin Dip!

Recipe: Pumpkin Dip (by Cooking Light)

3/4 cup (6 oz.) cream cheese (I use a lighter version, like 1/3 less-fat)
1/2 cup packed brown sugar
1/2 cup pumpkin, canned
2 tsp. maple syrup
1/2 tsp. ground cinnamon
24 apple slices

Place first 3 ingredients in a medium bowl and beat with a mixer at medium speed until well blended. Add syrup and cinnamon and beat until smooth. Cover and chill 30 minutes. Serve with apple slices.

Critiques: We all love this and the children get so excited when I serve it for their after-school snack :)
