This recipe is something my mom would always whip up for a quick dinner! I haven't made these in quite awhile and when I served them last night, Zachary told me that I should cook them more often! :)
Sous Chef: Anna kept asking to be my Sous Chef, but she still had to finish her other family jobs from earlier that day :) So, no one really.
Recipe: Bumstead Sandwiches (recipe from my mom)
Hoagie Rolls (I used thick slices of a crusty bread)
1 cup shredded cheese
3 large hard boiled eggs, chopped
1 can tuna (really any meat could be added...like chicken or ham)
2 T. green onion, finely diced
2 T. sweet or dill pickle relish
1/2 cup mayonnaise
salt and pepper to taste
*note: I always add a couple shakes of cayenne pepper
Pre-heat oven to 400. Mix ingredients together and spread onto bread slices. Bake for 10-15, or until cheese is melted and slightly golden around the edges. Best served warm.

I love the combination of flavors in the YUMMY!!! sandwich. I love tuna and finding a new recipe that is EASY!!! and something the whole family will ENJOY!!!
